Abstract: This paper uses the survey data of rice growers in Jiangsu Province to empirically test the relationship between risk attitudes and farmers' decision-making of outsourcing and to explore the mediating effect of risk perception in the process of risk preference affects outsourcing decision making. The results show that the outsourcing behavior of rice high-risk production is affected by farmers' risk bias. The low-risk production chain outsourcing does not show this feature; the improvement of outsourcing risk cognition level will promote the outsourcing degree of rice production; risk preference affects the decision-making of outsourcing by influencing risk cognition, that is, the mediating role of risk cognition is obvious. Therefore, in order to improve the agricultural outsourcing, in addition to providing corresponding outsourcing services, the government also needs to promote the risk awareness of outsourcing by means of policy publicity and knowledge popularization.
